Absolute Indian is a Hertfordshire-based cookery school run by founder Sheba Promod who originated from Kerala. Sheba grew up exposed to an amazing array of ingredients and flavours, marvelling at how her mother on a daily basis created culinary delights for her family, aspiring one day to imitate such feasts. Sheba decided to share her experiences and expertise with others and by launching the cookery school.
On courses Sheba replicates many of the Keralan dishes she was raised on as well as those from other parts of India. There is an array of courses for you to choose from whatever your level of expertise.
The courses are designed with you in mind, in groups of no more than 8. You are guaranteed lots of individual attention, as you are guided step by step through each recipe. A spice tasting session will help you to develop your senses to the spices and flavours, allowing you to combine ones to suit your preferences. You will be involved in the actual preparation and cooking and will go away with a meal to take home.
Whichever course you choose, you will be guaranteed to have an authentic Indian cooking experience!

We thoroughly enjoyed the delicious food. The delicate flavours of Kerala were delightful, we tried dishes we'd never had before. We had a warm welcome with cocktails in the garden. Each dish was fully explained, including each ingredient and how it would be traditionally eaten. Special care was given to the presentation and the service was good.
The other guest were supper club novices too and it is certainly something we will be trying again.
