These classes are focused around helping you get the most out of your meat and showing you how to pimp basic joints so they look fancy and satisfying from oven to table. The skills are transferable to other animals or joints. A really useful class.
We will cover three different joints :
Shoulder of pork
Leg of lamb
After a quick knife chat on types, sharpening, holds and cutting techniques each joint will be demonstrated before you get to get hands on with your own meat. We will joint the chicken whilst thinking about how you carve a whole bird at the dinner table, bone and roll (using those sexy butchers knots) the shoulder of pork and then butterfly your leg of lamb. To pimp your pieces we will look at brining, stuffing and rolling all the pieces.
We then sit down to a well earned late supper and drink. All the joints you have worked on are yours to take home (approx £80 retail value). So make sure you have a big dinner planned, some freezer space or very deserving friends.
