Pastelles are a traditional dish in several Latin American countries and brought to Trinidad and Tobago by our Spanish speaking neighbours. it is similar to a Mexican tamale. It is traditionally prepared and eaten at Christmas in Trinidad and Spanish speaking Caribbean. Trini Christmas is just not Trini Christmas without pastelles, sorrel, black cake and ponce a crem.
Its made with a base of Cornmeal with fillings of Raisins, Capers, Olives, Lamb, Beef, Saltfish, Soya and Vegetable. (Please confirm your choice of filling when booking)
You will be welcomed with a glass of sorrel or ponce a creme whilst you get to know your class. The class will begin with a short history of Trinidad and its food culture and its many historical influences. The class is a hands on class with full participation, all with endless sorrel and ponce a creme and parang music playing.
All ingredients, recipes and containers to take your goodies home with you will be provided. Just bring an apron
