As a child growing up in the Trinidad I would spend my holidays in ‘town’ (Port of Spain) with my Aunt and her family. Even more exciting was getting dressed up on a Sunday and going to the Hilton Hotel for Brunch.
We didn’t sit by the pool or even eat we just went to soak up the atmosphere and look out over the Savannah.
As an adult I still make that trip again and again, this time lounging poolside, chilling and eating one of the best breakfasts you will ever taste.
In this class I hope to recreate that feeling (minus the pool & sunshine 😂) while teaching you some of these breakfast staples:
- Saltfish Buljol - saltfish stewed with onions, tomatoes and pepper
- Roast Coconut Bake - a flat coconut bread
- Baigan & Tomato Choka - roasted aubergine with stewed tomato
- Sada Roti - plain flatbread
After you’ve mastered these, everything is placed in the middle of the table and we eat together over coffee, tea and fruit (or rum) punch.
All ingredients, drinks, recipes and boxes to take home the leftovers will be provided.
Just bring your apron, comfy shoes and a healthy appetite!
