Polpette di Sarde - Deep fried sardine meatballs with homemade aioli sauce

Cous Cous alla Trapanese - Homemade seafood salad dressed with chef's anchovy marinate served along celery, lentil, cannellini bean, olive, carrot cous cous topped with chef's squid ink sauce.

Gnocchi verdi alla Norma- Green Gnocchi with deep fried aubergine, caramelised cherry tomato, fresh basil and ricotta salata cheese.

Caponata al cacao magro e dadini di tonno grigliati - Char grilled tuna chunks laid on a bed of sweet and sour Sicilian vegetable salad with a final chocolatey end.

Bocconcini di maiale con zafferano e bietola arrimminata - pork dices cooked in white wine and saffron, and served along sauteed swiss chard with pinenut and sultana
