In this second appointment with our culinary Brexit resolutions we talk everything about Spring. Longer days, chilled booze, new season lamb and an awful lot of happier faces to feed.

MENU

Sicily can stay in - Sardines dressed with olive oil croutons, sultana, pine kernels, Pecorino cheese mousse, peppers ketchup, aubergine and fresh basil.

Risotto can stay in - Asparagus risotto with sea trout parcels, poached egg, mustard grains and watercress.

The future is mushrooms...and beef - Beef tenderloin sliders, Potato crisps, Morel and Porcini mushrooms, wild garlic, wild mushroom and beef jus

Lamb never really left - New season Lambserved with carrot, peas, grilled onions and served with clams and a sherry sauce.
