Indian High Chai
Generally had right after the quintessential afternoon nap, chai and biscuit is intrinsic part of the Indian food culture.
The 'right' way to make tea is with spices (ginger, cardamom, cloves), loose teas leaves and most importantly hot milk! The 'right' way to drink tea is to dip the biscuit in the tea and enjoy the moist deliciousness.
The Indian High Tea - over which marriages are agreed, disputes settles and deals signed is a more elaborate affair. A bit of savoury, a bit of sweet and but of course the 'garam pyala' (hot mug) of chai it can be quite a heavy affair!
