Hindi-Chini bhai-bhai, which in Hindi means, "Indians and Chinese are brothers"- was a slogan used in the 1950s to describe Indo-Chinese relations-without getting into the politics of how much "brotherly" love has really existed between these two nations....let me tell you about the confluence of these two culinary cultures which has led to a distinct style of Chinese cooking. Calcutta has had centuries of Chinese and in specific Hakka food influence from families who migrated to live in the city from China. Recently Calcutta has had a significant migration from Tibet and one of the starters for this supperclub is the Tibetan Thupa which is made with hand made noodles which is dried and then cooked in the soup. If you have never tried Indo-Chinese food- here is your chance!
