I booked a private class for 4 to try and learn more about the mystery of the macaron. I had previously been to a different class but left unsure and without a feel for making macarons.
Leigh's class is straight to the point and guides you through each step of the process carefully with vital tips throughout to make it all a lot easier, how to grind almond mix, different steps to meringue, how to get the batter to right consistency and tricks for piping and baking. Her recipe works perfectly, just may need a little adjustment with your own oven. I loved also making fillings, her ganache is amazing and so simple to make andthe buttercream is silky and delicious!
Leigh is lovely and very professional. She takes into account what you are trying to achieve, having the flavours we were interested in ready in the written recipes and ingredients. We all left inspired andhave been practising since. Personally she encouraged me to buy a Kitchenaid and I have made at least a couple batches a week since, something I would never have had confidence without this class. Thank you Leigh, I will be back for some cake decorating soon!
