Learning everything you need to know about beginners butchery, with great cooking tips and recipes.
You will get to head home with a bag of high quality meat to cook for Sunday lunch the next day or to stock your freezer.
Our Butchery Class, taught by David Redman our Meat Specialist from Dovecote Park – the sole supplier of Beef to Waitrose, will teach all you need to know to get started with butchery at home. This hands on class will allow you to treat your meat with the respect it deserves.
The classes will be of a smaller number to ensure everyone gets time to ask questions and perfect their technique. Starting with a demonstration covering what you will be doing during the afternoon you will then get stuck in, get your hands dirty and butcher your cuts to take home with you. Along with butchering the meat you will be shown how to stuff and tie a leg of lamb.
Not only is butchery a fun and fine skill to hone, but; with our chef giving you great recipe ideas for the meat; you will also be taught the best and most delicious ways to cook them, so that you are able to cook with confidence.
What you get to butcher and take home:
Blade and Flat Iron from the shoulder
Leg of Lamb – boning and stuffing
French Trim a Rack of Lamb
All the above can be frozen and used at a later date or even better cooked for Sunday lunch the following day.
If you would like to buy your own boning knife there is an option to add it to your trolley and we will give it to you on the day.
