I am a teacher of hotel school, now I live in Italy, but I am often traveling to London City. Knowledge of raw materia for processing into edible food is essential for good results, but what counts in a real dining experience for me is the right match and a balance between the various flavour components of food and wine. The imagination then, is the touch that distinguishes me as the genius in the time of preparation.
