In short what I do is source fine quality and exotic ingredients to create amazing Caribbean dishes. I visit Billingsgate at 4:00 am to handpick the freshest fish and the meat is directly from award winning farms, all other ingredients are organic or gourmet. My passion is cooking great dishes using only fine ingredients yet what I charge do not reflect this. I get to enjoy fully what I am doing rather just cooking for profit and you get an awesome dinner.

The spice level is mild/medium as all my ingredients are very fresh and flavors and some flavors are delicate or rare, I never over spice my food.
