If you have never been to my supperclubs before, in short what I do is source only fine quality and exotic ingredients to create some amazing Caribbean dishes. The fish is directly from Billingsgate Fish market, the meat from award winning farms, all other ingredients are organic or gourmet. My passion is cooking great dishes using only fine ingredients yet what I charge does not reflect this. I get to enjoy fully what I am doing rather than just cooking for profit and you get some awesome food.
Here is what I will be cooking up:
- Red Fish Broth w Sour Dough Bread
- Paradise Octopus Salad
- Soused Mackerel w Sauteed Ackee
- Special Recipe Duck Stew w Polenta Cou-Cou
- Bajan Rum Cake w Coconut Cream
This is an absolute food experience, the spice is mild/medium as all my ingredients are fresh and flavors delicate or rare I do not over spice my food.
