The demonstration is follwed by an intimate chat with the chef himself at the dinner table after the demo.

The teachers were personable, relaxed and friendly. The food was amazing. I had never seen that method of stuffing and cooking chicken and I can't wait to discover of Caribbean dishes, fish maybe?! The menu is definitely added to my repertoire now.
