Vanessa carefully selects, prepares and cooks ingredients in the tradition her ancestors who were Amerindian, African, French and East Indian.
Years and years of cooking with her father made her a true aficionada of rustic, authentic Creole Caribbean classics and her mother's influence induced her passion to fuse, but also bake and create desserts.

Great evening and amazing food!
Highly recommend this Creolicious Supperclub. The company, both hosting and being hosted, was incredibly warm, friendly, relaxed and interesting. The food was super delicious. And helping to make the sorbet old-fashioned style was a unique experience. In short, go!
I've always been a fan of Caribbean inspired food and can only say my interests have increased after experiencing the Caribbean Carnival Feast. The hosts were very friendly and informative about their creations and the group of supper clubbers were easy going, open and up for some fun. A particular favourite of mine was the fried whole parrot fish and the pumpkin mash, just wanted more and more of that orange delight, well done guys and keep it coming
All the dishes cooked (especially the saltfish cocktail and the creole cassoulet) were delicious! The desert (the cinnamon syrup over the oven-baked pineapple) was gorgeous!
There was such plenty of things to eat that I was not able to eat everything!

Best Saturday night out in ages
The teachers were personable, relaxed and friendly. The food was amazing. I had never seen that method of stuffing and cooking chicken and I can't wait to discover of Caribbean dishes, fish maybe?! The menu is definitely added to my repertoire now.

I had a blast! easy to follow recipes in a relaxed atmosphere and with a nice staff!
I discovered new ingredients and a very different style of cooking. I even wish there were 1 or 2 more recipes or chopping, it was too short!
I will definitely try the roulade in cling film and remember to use more salt cod, plantain and pineapple at home.
